We need at least four steps: boiling-deep frying- soaking- braising or steaming.
Cut the claws off and clean the dirty part on the chicken feet
Part 2 : Boiled
Boiling a large pot of water, add
1 spoon of salt,
1 spoon of sugar,
Cook the chicken feet for 2 to 3 minute, transfer out for drain and dry.
Part 3 : Fried
Deep frying the chicken feet
Heat up oil on deep-pan or wok to medium heat around 180 deg C. Add chicken feet to fry about 5 minute till golden colour, transfer out for the next step
Part 3 : Soaking
Transfers the chicken feet to cold water, wash out the oil. Soak the chicken feet in water for 2 to 4 hours, if you want to have better texture and the wrinkles then soak it overnight.
Part 4 : Braised
Ready to cook, heat up pot of water covering the chicken feet, add in all ingredients. Bring to a boil, then turn to low heat and simmer another 1-1/2 to 2 hours with cover up the pot. Check the water level every 30 minutes. Add in water if needed.
Ingredients :
20 chicken feet
8 shiitake mushroom
2 garlic cloves
6 dry chili (Optional)
1/2 inch ginger
8 star anise
2 spoon soy sauce
2 spoon dark sauce
1 spoon chicken sauce / oyster sauce
1 spoon sesame oil
1 spoon sugar
1 teaspoon white pepper
Salt to taste
